Wire and screw whisks
History tells us that before the invention of the wire balloon whisk, twigs were tied together and used for the beating of eggs or cream.
Flat wire whisks are best suited to sauces and are sometimes called 'French' whisks, whilst spiral or coil ones are used for aerating liquids.
A more quirky design was the screw whisk which consisted of a little ball of wire which spun round when you pushed down the spiral handle. Similar was the Nubrown Easy whisk which activated a little rotary whisk when you pushed down the handle.
